info: Burdock root is both sweet and crisp with a decidely nutty flavor. A good source of vitamin B6, magnesium, phosphorus, potassium and manganese.storage: Wrap in slightly damp paper towels and refrigerate - keeps for up to 5-6 days.
preparation: Wash in cold water. Peel the skin, if desired (although if you leave the skin on when cooking, it will be sweeter!).
Prepare similarly to that of a carrot - cut/chop to desired size and boil, saute or roast.
