info: Raab, (a.k.a. broccoli raab, rabe &/or rapini) is a leafy green vegetable with clusters of broccoli-like buds. It has a pungent, nutty flavor, somewhat similar to broccoli (but stronger). A good source of vitamins A, C, and K, as well as potassium, calcium, and iron.storage: Store unwashed leaves wrapped in a loose paper towel in the refrigerator - keeps for 3-4 days.
preparation: Wash in cold water & trim stem ends. Cut stalks into 1-2 inch chunks. Treat the greens like any leafy green.
You can broil, stir-fry, braise, saute, or steam raab. Be careful not to overcook.
